Roasted Cauliflower Parmesan

Ingredients:
Olive oil cooking spray
½ Tbsp. olive oil
½ Tbsp. lemon juice
1/8 tsp. kosher salt
Freshly ground pepper
½ head cauliflower, broken into florets
½ Tbsp. lightly toasted fresh breadcrumbs
1 Tbsp. grated Parmesan cheese

Preparation: Preheat oven to 475 degrees. Lightly coat shallow nonstick baking pan with cooking spray. In large bowl, whisk together olive oil, lemon juice, salt and pepper. Add cauliflower and lightly toss. Transfer cauliflower to baking pan and drizzle with any leftover olive oil mixture. Roast for 12-15 minutes until browned and just tender, turning cauliflower once.

Mix toasted breadcrumbs with cheese. When cauliflower is done, top with breadcrumb mixture. Serves 2.

Per serving: 101 calories, 12 g carbohydrate, 5 g protein, 5 g fat, 4 g fiber, 2 mg cholesterol, 131 mg sodium
