Ingredients:
1 10-oz. can pineapple slices, packed in juice
1 clove garlic, minced
1 ¾-inch piece fresh ginger, minced
½ tsp. cumin
1/8 tsp. red pepper flakes
2 5-oz. halibut steaks, 1-inch thick
Preparation:
Light grill or preheat broiler. Drain pineapple, pour juice into glass baking dish. Add seasonings. Lay halibut in dish, turn once to coat. Grill halibut 4-6 inches from heat source for 5 minutes. Brush once with marinade. Turn halibut and add pineapple to the grill. Cook for another 5 minutes, turning pineapple once, brushing pineapple and fish with marinade.
Place pineapple slices on top of halibut. Serve immediately.
