Mexican Tomato Relish

Ingredients:
2 large ripe tomatoes (about 1 pound total), finely chopped
½ red onion (3 ounces), minced
2 large cloves garlic, minced
1 jalapeno chile pepper, seeded and finely minced
2 tablespoons lime juice
3 tablespoons chopped fresh cilantro, plus extra for garnish


Preparation: Bruschetta
In a bowl, combine the tomatoes, onion, garlic, jalapeno, lime juice, and cilantro. Allow to sit at room temperature for 1 hour before serving.

To serve, place 2 tablespoons of the relish on each piece of bruschetta. Garnish with extra cilantro.

Makes about 2 cups, enough for 16 bruschetta.
